Banana Bread

For breakfast, for tea, or anytime indeed!
Banana Loaf

Banana bread, the beloved.


– 2 cups all-purpose GF flour (Little Aussie Bakery Brand)

– ½ cup oil

– ¼ cup brown sugar

– 3 large eggs

– ½ cup ripe, mashed bananas

– ¾ cup sour cream (for DF, mix ¾ cup coconut cream with 1 tsp lemon juice)

– 2 ½ tsp baking powder

– ¾ tsp salt

– ¾ tsp guar gum

To prepare:

  1. Preheat oven to 350ºF
  2. Grease a 9” x 4” loaf pan with Pam® or similar
  3. Mix together all dry ingredients except brown sugar
  4. In a separate bowl, mash bananas
  5. In a third bowl, mix oil and brown sugar until creamy
  6. Add eggs to oil mixture one at a time while slowly beating
  7. Add dry ingredients to wet and mix well
  8. Add bananas and sour cream (or coconut cream and lemon juice)
  9. Mix batter until smooth
  10. Pour batter into a 9” x 4” loaf pan
  11. Place in middle rack in a 350ºF oven
  12. Bake for 45 to 60 minutes, or until a knife inserted into the center comes out clean
