What’s a buckle?? First off, know it’s delicious. Then, think of a pie crust filled with fruit cobbler and topped with cake batter. This, is what makes a buckle. Traditionally, blueberries made up the filling of a buckle, but we’re leaving it open to any fresh fruit you may have on hand. The three steps are: make pie crust, fill with fresh fruit compote, then top with cake batter. It’s a snap! Here we have our easy to follow, gluten & dairy free recipe.
STEP 1. Prepare your perfect, buttery gluten-free pie crusts. No baking needed! The crust can be raw when filled then baked with filling and topping altogether.
PREHEAT oven to 375°F
STEP 2. Mix the fruit filling, by tossing together in a bowl:
- 6 cups blueberries
- 1 cup granulated sugar
- 1 Tblsp Lemon Juice
- 1 Tbsp Guar Gum
SPOON fruit filling into crusts
STEP 3. Make the cake batter topping. First, CREAM to a fluffy mixture that’s pale in color:
- 1 ½ Cups Sugar
- 1 Cup + 2 Tbsp Butter (we use EarthBalance Soy-Free/Dairy-Free)
ADD to this mixture:
- 6 eggs
- 1/2 Cup Milk (we use coconut milk as dairy-free alternative)
- 1 Tbsp Vanilla Extract
BLEND together in a separate bowl:
- 3 Cups All-Purpose GF flour (Little Aussie Bakery Brand)
- 1 tsp Guar Gum
- 1 tsp Salt
- 3 tsp Baking Powder
ADD this to the wet ingredients and BEAT until smooth. POUR the batter over pie crusts with fruit
STEP 4. BAKE at 375°F for 30-40 min, or until top is golden brown.
