Mincemeat Cookies

Christmas in London with SnowIt’s starting to show again. My English heritage, I mean. If Christmas in England has to be summed up into one food item, it would definitely be mincemeat. Nowadays you can buy pre-made mincemeat in just about any grocery store during the holidays. In fact, this recipe is adapted from the one found on the box of Borden Nonesuch Mincemeat! Unfortunately, nearly every commercially-made mincemeat now contains corn syrup instead of sugar as a sweetener. Luckily, we’ve found an awesome homemade mincemeat recipe from Joy of Baking that we’ve used for these cookies (you can substitute juice for a kid-friendly version). We’ve taken a favorite recipe and made our version free of gluten, dairy, soy, corn, and nuts. We haven’t tried it without eggs, but would love to hear anyone’s results in using an egg replacer. What are you waiting for? Let’s get baking!

  1. Preheat oven to 400° F.
  2. Mix together flour, guar gum, salt, and baking soda.
  3. In a separate bowl, cream the butter. Add sugar slowly and continue to cream until light and fluffy.
  4. Add eggs to butter mixture and beat until smooth.
  5. Slowly stir mincemeat into the butter blend.
  6. Gradually add the flour mixture to the butter blend and mix until well incorporated.
  7. Drop by rounded teaspoon onto a greased baking sheet
  8. Bake in a preheated 400° F oven for 12-15 minutes or until golden brown.
  9. Serve and enjoy. Happy Christmas from the Little Aussie Bakery!
