Cranberry French Toast Recipe

Gluten Free Cranberry Bread from the Little Aussie Bakery & Cafe in San Antonio, TexasI’m pretty traditional when it comes to breakfast foods, so I have to admit that it never even occurred to me to attempt to make french toast with cranberry bread. For years, I made my french toast with plain ol’ flax bread, which is honestly pretty awesome in it’s own right. But then we introduced our gluten free cranberry bread to the Texan grocery chain H-E-B, and something magical happened. We started to get tons of emails from customers telling us how much they were enjoying the gluten free cranberry bread, and how it had totally revolutionized their breakfast. A few told us how they enjoyed the cranberry bread toasted with a bit of butter or jam, but one pattern that emerged rather quickly was the suggestion to make french toast with the cranberry bread. I was a bit hesitant at first – I mean, french toast is already pretty delicious and I really couldn’t imagine it getting any better – but I finally decided to try it for myself. All I have to say is I’m sorry I ever doubted anyone who suggested making french toast with cranberry bread. It’s the best breakfast invention since sliced {gluten free} bread!

Ingredients:

Method:

  1. Heat the olive oil in a frying pan over medium heat.
  2. Crack the eggs in to a large bowl.
  3. Holding the bowl at an angle, whip the eggs with a fork until fluffy.
  4. Place the bread slices in the whipped eggs.
  5. Soak for one minute.  Flip and soak the other side for one minute.
  6. Place the soaked slices in the preheated pan.  Fry for 3-4 minutes on each side.
  7. Arrange the fried slices on a plate.
  8. Cover with a generous helping of golden syrup.
  9. Sprinkle with plenty of cinnamon and powdered sugar.
  10. Garnish with fresh whipped cream and your favorite fresh fruit.
  11. Sit back, relax, and enjoy!
