Gluten Free Peach Cobbler

This really is cobbler 2.0.  Our version of this easy to make summertime dessert is so allergy friendly, the whole family can enjoy it!  Think of a fresh-baked pie crust filled to the brim with juicy fruit pieces and then topped with cake batter. But enough talk. Here we have our easy to follow, gluten & dairy free peach cobbler recipe.

yields enough for two 9″ pie crusts (get the recipe here or buy online)

Pie Crust smSTEP 1. Prepare your perfect, buttery gluten-free pie crusts. No baking needed! The crust can be raw when filled then baked with filling and topping altogether.

PREHEAT oven to 375°F

STEP 2. Mix the fruit filling, by tossing together in a bowl:

  • 6 cups chopped peaches
  • 1 cup granulated sugar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Guar Gum

SPOON chopped peaches into crusts

STEP 3. Make the cake batter topping. First, CREAM to a fluffy mixture that’s pale in color:

  • 1 ½ Cups Sugar
  • 1 Cup + 2 Tbsp Butter (we use EarthBalance Soy-Free/Dairy-Free)

ADD to this mixture:

  • 6 eggs
  • ½ cup milk (we use coconut milk for dairy free)
  • 1 Tbsp Vanilla Extract

BLEND together in a separate bowl:

ADD this to the wet ingredients and BEAT until smooth. POUR the batter over pie crusts with fruit

STEP 4. BAKE at 375°F for 30-40 min, or until top is golden brown.
